Sam’s Rich and Delicious Lemon Pie Recipe for Friendsgiving

  • 1 ½ sleeves of saltine crackers
  • 1 ½ sticks of butter
  • 2 tbsp sugar
  • 1 can condensed milk
  • 4 egg yolks
  • ¼ cup heavy cream
  • ½ cup lemon juice
  • Lemon zest
  • 1 cup whipping cream
  • ⅛ tsp salt
  • 1 tsp vanilla


Pie Shell:

  1. Dump 1 ½ sleeves of saltine crackers, 1 ½ sticks of unsalted butter and 2 tablespoons of sugar into a food processor and pulse until it becomes an even mixture. Pour into a pie plate and press firmly into the dish. 
  2. Bake at 350 for 10 minutes.
  3. Let cool.

Pie Filling:

  1. In medium bowl, mix 1 can condensed milk, 4 egg yolks, ¼ cup heavy cream, ½ cup lemon juice, 2 tablespoons of lemon zest, 1 cup whipping cream, ⅛ teaspoon salt and 1 tsp vanilla. Beat with a metal whisk for about 3 – 5 minutes until mixture thickens.
  2. Pour into half-baked pie shell, return to oven for 20 minutes.
  3. Let cool.
  4. Once cool, top with fresh whipped cream.
