SLN teamed up with 6 student chefs to put together 6 easy recipes for Friendsgiving, the holiday happening on Saturday, October 10th, dedicated to spending time with your friends. INGREDIENTS
- 1 ½ sleeves of saltine crackers
- 1 ½ sticks of butter
- 2 tbsp sugar
- 1 can condensed milk
- 4 egg yolks
- ¼ cup heavy cream
- ½ cup lemon juice
- Lemon zest
- 1 cup whipping cream
- ⅛ tsp salt
- 1 tsp vanilla
INSTRUCTIONS
Pie Shell:
- Dump 1 ½ sleeves of saltine crackers, 1 ½ sticks of unsalted butter and 2 tablespoons of sugar into a food processor and pulse until it becomes an even mixture. Pour into a pie plate and press firmly into the dish.
- Bake at 350 for 10 minutes.
- Let cool.
Pie Filling:
- In medium bowl, mix 1 can condensed milk, 4 egg yolks, ¼ cup heavy cream, ½ cup lemon juice, 2 tablespoons of lemon zest, 1 cup whipping cream, ⅛ teaspoon salt and 1 tsp vanilla. Beat with a metal whisk for about 3 – 5 minutes until mixture thickens.
- Pour into half-baked pie shell, return to oven for 20 minutes.
- Let cool.
- Once cool, top with fresh whipped cream.
Watch it all put together.
