Tyler’s Crispy and Gooey Arancini Recipe for Friendsgiving

INGREDIENTS

  • 6 tbsp butter
  • 3 tbsp olive oil
  • 2 shallots
  • 1 cup arborio rice
  • ½ cup dry white wine
  • 3 cups vegetable stock
  • ⅛ tsp salt
  • ¼ cup parmesan cheese
  • ½ block mozzarella cheese
  • 3 eggs
  • 2 cups flour
  • 2 cups panko breadcrumbs

INSTRUCTIONS

Risotto:

  1. Heat butter and oil in large, straight-sided saute pan. Add shallot and allow to sweat. DO NOT BROWN.
  2. Add rice and stir in until well coated in the butter/ oil.
  3. Pour white wine into the pan with the rice, stir to incorporate until liquid is nearly dissolved.
  4. Slowly begin to add the chicken stock into the pan with the rice. Stir continuously until all stock is absorbed. Approx 20 mins.
  5. When the rice is tender, but firm, stop adding the stock. Remove from heat, stir in raw butter and parmesan cheese. Season to taste with salt.
  6. Spread cooked risotto onto a parchment-lined baking sheet. Place into the fridge and allow to cool completely. 1 hour

Assembly:

  1. Form 50 g balls from cooled risotto. Place back onto a baking sheet.
  2. Create well in the centre of each rice ball and fill with mozzarella ( can fill with a variety of fillings). Shape the rice back around the mozzarella.
  3. Place baking sheet with newly formed risotto balls back into the fridge and allow to chill for additional 10 minutes.
  4. Run the formed balls through a breading process (flour, egg, panko) and back onto the baking sheet.
  5. In batches, small enough for your fryer to handle without dropping in temperature, fry the breaded arancini until nicely golden brown.
  6. Remove arancini from the deep fryer and directly onto a paper towel-lined baking sheet.
